This was freaking delicious. I was suspicious since there was a lot of carrot in here but you barely taste it. *drool* I practically inhaled one. Even my daddy liked these. ^_^ The carrots made the cupcake moist. Similar to grated zucchini. Please, you have to try this one out. I won't repost the recipe since it's available on the youtube page. I will tell you the adjustment I did do. They turned out super well despite my little modifications.
My adjustments:
1 Cup of Whole Wheat Flour + 1 Cup Flour --> 2 cups of Spelt Flour
1 Cup of Raw Sugar --> 1 cup of Coconut Palm Sugar
I also added crushed walnut bits on top of the frosting. Let me tell you right now, add the nuts on top. It brought everything together, getting this nice crunch.
