Simple Avocado Wedge Fries Recipe

Hello, minna-san!
I have been cooking up a storm despite the hot weather.  Ugh~  I decided to add one recipe that absolutely adore as a side to any meal.  Especially with a sandwich or soup.  I have a major obsession with avocado.  However, I was sick of just adding it to my salad and when I came across this recipe during one of many recipe searches, I just had to try it.  It was absolutely fab!  If you love avocados, you have got to try this.  The consistency of the avocado is slightly more firmer and the cooking changes the taste slightly.

Simple Avocado Wedge Fries

Ingredients:
  • 1 Firm Avocado (Size doesn't matter in this case.  I tried with really firm ones and did not work as well.  But not too soft that the avocado does not hold its shape when picked up.)
  • Breadcrumbs (I tried with Panko and it didn't adhere as well.  It definitely added some crunch though. :/  If you like a healthier alternative, Almond Meal might be a good choice)
  • Salt, Pepper and Crushed Red Pepper to taste (You can always add whatever spice and herbs.)
  • Olive Oil Spray

Directions:
  1. Halve the avocado and remove the pit.  Slice (not all the way) the avocado into 4 pieces.  This way you get nice thick wedges.  With a spoon, carefully scoop out the individual pieces.
  2. Preheat the oven to 350C.
  3. In a bowl, place enough breadcrumbs to coat the avocado and add your spices.  
  4. Dip each wedge into the breadcrumb mixture and make sure all surfaces is coated.  It should adhere with no problems.  Place on parchment paper.
  5. OPTIONAL: Spritz a bit of olive oil on the wedges.
  6. Cook for 10 minutes.
I ate these with ketchup and they actually taste yummy.  XD  This is a really flexible recipe that can be modify to fit anyone's taste.  You can even add parsley and ginger.  Make it your own.
